This single malt is a companion to Paul John’s Oloroso Select Cask whisky, and as the name indicates, is matured in Pedro Ximenez Sherry casks. The nose has touches of toffee, figs, caramel candy, honey, brown sugar, and a hint of oak. The taste has a spicy burst at the beginning that fades to reveal notes of black cherries, brown sugar, figs, and a touch of barley sugar. The finish is dry and dusty with lingering spices and a nice sweetness. (March, 2021)
