This is the rarest of the Wyoming Whiskey expressions, and the 2018 edition is only the second one in the distillery’s young history. The nose has dry spices and touches of honey, toffee, caramel, and charred oak. The taste starts off sweet with honey, while burnt caramel and toasted vanilla give a hint of what’s coming next. The spices come alive with hints of cinnamon, allspice, and chili powder that are assertive without overpowering the sweetness underneath for excellent balance and complexity. The finish is long, but gentle with lingering touches of charred oak, toasted vanilla, burnt caramel, and honey in the background. Excellent! (September, 2018)
