Woody Creek Distillers makes its rye with grain grown in Fort Collins, Colorado, and the nose has notes of dill, thyme, a hint of vanilla, and muted spices. The taste starts off smooth, followed by a buildup of spicy clove, cinnamon, dill, and vanilla notes with caramel and brown sugar underneath. The finish is long with nice, lingering spices and a good balance. (August, 2017)
