This is one of Dave Pickerell’s last creations for WhistlePig, and is a 6-year-old Rye whiskey imported from Canada. While it was designed to work especially well in cocktails…served neat, the nose has notes of dill, charred oak, herbs, muted spices, and a hint of honey. The taste is spicy with clove, cinnamon, and allspice balanced by a hint of dill, honey, and dark chocolate. The finish is long with subtle spices. Very nice. (April, 2019)
