This is a first for WhistlePig…a brand that’s been based on Rye whiskies from Day One is out with its first Bourbon. True to the distillery’s heritage, though…it’s as high-rye as one can get: 51% corn and 49% rye, and matured for four years and seven months at the WhistlePig Farm in Vermont. The nose has notes of leather, tobacco, charred oak, and hints of molasses and brown sugar, along with a touch of maple that comes out with time in the glass. The taste has good spicy notes of clove, allspice, cinnamon, and a hint of chili powder balanced by a subtle sweetness that builds as the spices fade with molasses, brown sugar, and a bit of maple. The finish is long, warm, and well-balanced. Bourbon distillers take note…if you dismissed WhistlePig as “just Rye” before, watch out! (July, 2021)
