Irish farmer John Tynan grew the barley for this whisky on his land in County Laois, and the nose is aromatic with a nice maltiness and an earthy hint of wet straws along with touches of cocoa powder, honey, toffee, and a hint of sawdust. The taste has a good balance of barley sugar and white pepper with a touch of cardamom and hints of chocolate and honey that come out as the spices fade. A few drops of water opens up dried fruits, while also giving the spices a kick. The finish is long and subtle with a lingering touch of spice. (August, 2020)
