This whiskey gets its name from “Bill Phil,” founder Daithi O’Connell’s grandfather. William Philip O’Connell was known simply as “Bill Phil” to his friends, and the name has stuck with his descendants. The whiskey is a peated Irish single malt from the Great Northern Distillery in Dundalk, and the nose has a light, soft peatiness with touches of grilled fruits, shortbread cookies, and a nice maltiness. The taste is peaty and tart with a good smokiness and touches of grilled citrus, lemon pepper spice, honey, and vanilla. The finish is long and warm with a subtle smokiness. (March, 2022)
