Virginia Distillery Co. Courage & Conviction. Image courtesy Virginia Distillery Company. This batch is named in honor of the late Jim Swan, who worked with the distillery as a consultant and helped create its early whiskies along with teaching the team about his “STR” cask method of using shaved, toasted, and re-charred wine casks for maturing whiskies. The nose on Batch #2 has a sweet, creamy nose with touches of butterscotch, caramel, and honey. The taste is fruity and vibrant with notes of red apples, raspberries, cocoa powder, along with touches of allspice and black pepper. The flavors carry over through the long and gently fading finish. Very nice. (November, 2020)
