Virginia Distillery Co. Courage & Conviction. Image courtesy Virginia Distillery Company.This first batch of Courage & Conviction is named for the late Dr. George G. Moore, who founded the family-owned distillery. It’s matured in a combination of ex-Sherry, Bourbon , and cuvée wine casks, and the nose has notes of butterscotch, caramel, fresh berries, vanilla, and muted spices. The taste has a nice malty character with touches of apples, raspberries, strawberries, cocoa beans, and hints of clove, allspice, and vanilla. The finish is long and fruity with good underlying spices. Very nice. (May, 2020)
