This single malt whisky from Yukon Spirits in Whitehorse, Yukon is unique in that it’s made with a sour mash fermentation usually seen in Bourbons and Tennessee Whiskies. The nose is malty with a subtle smokiness and notes of baked apples, a hint of dill, smoked salmon, and hints of melons and tropical fruits in the background. The taste is smoky and peppery with flavors that build to a crescendo of allspice, apricot, a hint of pears, cinnamon baked apples, and a subtle oakiness for a well-balanced and complex palate. The finish is long and smooth with lingering smokiness and spiced, along with a subtle touch of lemon zest. Excellent! (June, 2017)
