Image courtesy Tipperary Distillery.This Irish single malt is blended from Cooley casks selected by longtime Scotch Whisky maker Stuart Nickerson for Tipperary Distillery, which is owned by his daughter and son-in-law. Stuart selects six first-fill ex-Bourbon casks of varying ages for this whiskey, which has a nose of caramel candy, vanilla, honey, dried flowers, and a touch of fudge. The taste starts off with notes of black tea, lemon, and honey – followed by a pepperiness that comes alive and lingers through the finish with notes of white pepper, ginger root, honey, vanilla, and a hint of oak.
