This Irish single malt from the Walsh Whiskey Company has a floral and malty nose with notes of dried flowers, freshly-cut grass, and honey. The taste starts off creamy and smooth with barley sugar and vanilla notes followed by a burst of allspice, white pepper, and citrus. Dried flowers and a touch of butterscotch add complexity and balance in the background. The finish is long and gentle with subtle spices and dried flowers. (November, 2018)
