The Dublin Liberties Oak Devil Irish Whiskey. Image courtesy First Ireland Spirits/Quintessential Brands. This is a 5-year-old blend of Irish malt and grain whiskies matured in ex-Bourbon casks, and the nose is creamy with notes of honey, butterscotch, and caramel. The taste is well-balanced with sweet notes of honey, butterscotch, and a subtle bite of tartness that develops slowly along with a hint of dried flowers. The finish is long, sweet, and fades away gently. It’s rare to see a young Irish blend bottled at 46% instead of 40%, but the extra bottling strength makes a difference here. (December, 2020)
