The Balvenie DCS Compendium 1993. Image courtesy William Grant & Sons.This 1993 single cask bottling is part of Chapter 3 of The Balvenie’s DCS Compendium series, which honors the distillery’s longtime Malt Master, David Stewart. It was matured for 23 years in a refill American Oak hogshead cask (#11621), and the nose is creamy with notes of vanilla, honey, caramel ice cream topping, fudge, and muted spices. The taste is smooth and creamy with lots of vanilla, honey, fudge, and dark chocolate at first, and then the spices come alive with clove, white pepper, black pepper, and a hint of cinnamon that last throughout the long, warming finish.
