While the characteristics may vary slightly from barrel to barrel, the nose will generally have notes of apple pie, honeycomb, a hint of anise, and a good maltiness. The taste starts off spicy with hints of allspice and ginger, along with touches of barley sugar, berry cobbler, and a hint of apples for a well-rounded flavor. The finish is long and malty with barley sugar, fading spices, and a touch of anise in the background. Excellent! (January, 2019)
