Producing WhiskyCast has given me the opportunity to taste some really amazing whiskies, and I’m pleased to share my tasting notes with you here. You can search my entire database of tasting notes from this page, and I hope you’ll find it useful.
This is about as close to a 100% Texas whiskey as one can get, and that’s only because there are no cooperages making barrels in the state. Still Austin uses Texas-grown corn, rye, and malted barley, along with a “slow-water reduction” process that sees a little bit of water added to barrels each month to compensate for the wild swings in the Hill Country climate. The nose has notes of caramel apples, honey, peaches, a soft oakiness, cocoa beans, and a hint of tobacco. The taste is sweet at first with chocolate-covered cherries followed by a burst of black pepper and mesquite spices while honey, caramel, and vanilla provide complexity in the background. The finish has soft spices and a lingering touch of those same chocolate-covered cherries. Nice! (September, 2020)
