Image courtesy Starward Whisky.This Australian single malt is matured in Apera fortified wine casks from the vineyards around Melbourne and uses a solera-style process in which younger whiskies are used to top off older barrels and ensure overall consistency from batch to batch. The nose has a nice balance of baking spices, baked apples and cherries, a hint of apricots, and touches of honey and vanilla. The taste is spicy and fruity with notes of clove, allspice, white pepper, red apples, apricots, and hints of citrus, honey, and toasted coconut. The finish fades away slowly with a nice spiciness and hints of dried fruits. (October, 2018)
