This single cask malt from Canada’s Still Waters Distillery is a shade over three years old, and its youth is apparent on the nose. It’s malty with notes of straw, ginger, honey, and a hint of oakiness. The taste is fiery and intense with black pepper and cinnamon notes that are slow to fade, but reveal hints of lemony tartness when they do. The finish is long and spicy. (October, 2013)
