Image courtesy J&A MItchell/Springbank Distillers.This 20-year-old Springbank was matured in a refill ex-Bourbon cask, and the nose has good spices, along with touches of grilled salmon, brine, honey, brown sugar, and a touch of oak. The taste has a hint of sea salt along with grilled salmon, white pepper, allspice, and oak for a nice balance and complexity with spices that build up slowly and complement the other notes nicely. The finish has lingering spices balanced by sweeter notes of honey and brown sugar. Excellent! (May, 2018)
