This refill ex-Sherry cask was bottled for the Canadian market and was selected by Springbank’s Canadian importer, Andy Dunn, along with Andrew Ferguson, Hunter Sullivan, and Jen Tuff of Calgary’s Kensington Wine Market. A portion of the proceeds from each bottle will be donated to charity.

The nose has notes of smoked salmon, wet briny sand, driftwood campfire smoke, and sea breeze at first. Time opens up subtle touches of orange peel and fig notes to add complexity. The taste is peppery and pungent with good cinnamon and black pepper notes. Linseed oil and lemon furniture touches come out gradually, with brine and smoked salmon in the background. The finish lingers wonderfully with good consistency as the notes from the palate fade away gracefully. (October, 2013)
