Image courtesy Santa Fe Spirits.Santa Fe Spirits founder Colin Keegan wanted to do something different with his New Mexico distillery’s single malt, so he smoked the malt over mesquite smoke instead of peat. This single barrel bottling has soft mesquite smoke on the nose, along with honey, soft spices, sawdust, and hints of grilled chicken and warm tortillas. The taste is smoky with touches of maple syrup, clove, chili powder, and mesquite seasoning, along with honey and vanilla. The finish is long, smoky, and spicy. An excellent example of a single malt with unique regional character! (May, 2018)
