This whiskey from Vermont’s Appalachian Gap Distillery is distilled from a mash of corn, rye, and malted barley, but it’s matured in a combination of new and used barrels, which is one of the reasons why it’s called a Vermont whiskey. The nose is aromatic and sweet with hints of maple, honey, vanilla, brown sugar, and a soft touch of oak. The taste has good spicy touches of black pepper and clove balanced by honey, vanilla, and caramel notes. The finish is long with spices that stick around for a while and gentle hints of sweetness in the background. (October, 2018)
