This is a US exclusive for Redbreast, and will be an annual release. It’s matured in ex-Bourbon and Sherry casks, then blended before a final maturation in Oloroso Sherry butts. The nose has notes of figs and cookies along with a hint of citrus fruits complemented by baking spices, honey, and vanilla. The taste is thick and fruity with touches of clove, allspice, white pepper, and a hint of cinnamon. Hints of oak and dark chocolate in the background pull it all together. The finish is long and spicy with a nice balance of fruity character. Excellent! (February, 2021)
