This whiskey is the debut for a new American Oak series of Redbreast bottlings, and was finished in Virgin Oak sourced from the Taylor family in Kentucky. The nose has a good balance of cinnamon and sandalwood along with touches of plums, pears, and apricots balanced by toasted vanilla, roasted coffee beans, and a hint of hazelnut. The taste has an excellent balance of baking spices, cinnamon, vanilla, a hint of oak tannins, and touches of figs, dates, and orange peel in the background that come alive as the spices start to fade. Adding some water reduces the astringency slightly while opening up a touch of clove along with the other baking spices. The finish is long and luscious with a good balance of fruits and spices.
