This is the fourth annual Redbreast Dream Cask release, a 29-year-old Single Pot Still Irish whiskey that spent those years in a combination of ex-Bourbon, Sherry, and Ruby Port casks. It was then finished in a single Oloroso Sherry butt for 15 months before bottling. The nose is fruity and sweet with subtle spices and touches of peaches, red apples, apricots, and a hint of ginger. The taste is nectar-thick and luscious with a great balance of fruity notes that dominate at the start, followed by a subtle burst of baking spices complemented by touches of honey and brown sugar. The finish is long and complex with an excellent balance. Wow! (May, 2021)
