Producing WhiskyCast has given me the opportunity to taste some really amazing whiskies, and I’m pleased to share my tasting notes with you here. You can search my entire database of tasting notes from this page, and I hope you’ll find it useful.
This 30-year-old whiskey is a blend of two unique casks: a 1990 first-fill ex-Sherry cask and a 1991 first-fill ex-Bourbon barrel. The result is a fruit bomb on the nose, with touches of black cherries, old leather and wood, cassis, star anise, and subtle spices. The Oloroso Sherry influence comes out slowly with hints of spent French Press coffee grounds. The taste…oh, wow! Fruity notes explode on the palate first followed by spices, but the fruity character outlasts the spices with black cherries, dark berries, hints of licorice and eucalyptus, subtle oak tannins, and roasted almonds. Adding a little bit of water opens up touches of plums, raisins, and crème brûlée. The finish is long and fruity with subtle touches of spices and oak tannins. Outstanding! (May, 2022)
