Red Saw Rye Whiskey. Image courtesy Honeoye Falls Distillery.This rye whiskey from Honeoye Falls Distillery in Rochester, New York is unusual, not because it’s made with a mashbill of locally grown 85% rye and 15% malted barley, but because the barley is malted using a traditional malting floor. The nose has a nice balance of rye spices with sweeter notes of honey and brown sugar. The taste lets those spicy notes of clove, anise, and nutmeg come alive with a hint of linseed oil, honey, and vanilla to keep things balanced. The finish is long with spices that fade away slowly and nice touches of honey and brown sugar. Very nice! (May, 2018)
