This Single Pot Still whiskey from Ireland’s Midleton Distillery is matured primarily in ex-Bourbon casks with a small percentage of ex-Sherry casks. The nose is rich and complex with a touch of barley, muted spices, rosemary, anise, walnuts, and hints of banana and grapefruit. The taste starts off creamy, followed by notes of apples, grapefruit, clove, cinnamon, and pencil shavings. The finish has notes of granola cereal with pieces of apple, nuts, and a hint of grapefruit that lingers on the tongue. For years, it was only available in Ireland, but is now being exported to the United States. (Tasted December, 2015, and updated October, 2018)
