Pike Creek 21 Years Old 2017 Edition. Image courtesy Corby Spirits & Wine. This whisky is from Corby’s 2017 Northern Border Collection Rare Release series, and is finished in casks previously used at an undisclosed Speyside distillery in Scotland. The standard (and much younger) Pike Creek whisky is finished in Rum casks, giving this whisky a unique take on the Pike Creek profile. The nose is sweet, creamy, and well-balanced with notes of barley sugar, straw, muted spices, milk chocolate, and vanilla. The taste has good spicy notes of clove and allspice, along with barley sugar and a hint of malt, fresh bread, honey, and a subtle hint of oak. The finish is very long and warming. Excellent!
