Pearse Irish Whiskey: Distiller's Choice. Image courtesy Pearse Lyons Distillery.This is one of the original releases from the Pearse Lyons Distillery, which opened in Dublin in 2017. The blend is made from whiskies between three and nine years old, including mature whiskey from the stills now in the Pearse Lyons Distillery. In an unusual move, the stills were installed and used for a couple of years at the Carlow Brewing Company in Ireland’s County Carlow while the distillery’s home in Dublin’s historic St. James’s Church was being restored.

The nose has notes of lemon-lime citrus fruits, along with green apples and vanilla. The taste is fruity and tart with good spices and touches of vanilla, caramel, and oak. The finish is long and fruity with hints of oak and linseed oil, along with a slight nuttiness. (February, 2018)
