This is the first release in the Castle Hill series, named for “The Castle,” the former Texas Military Institute located on a hill above the Texas State Capitol in Austin that’s now home to Milam & Greene’s Austin headquarters and Heather Greene’s blending lab. It’s a blend of 20 casks of 13-year-old Tennessee Bourbon acquired by Milam & Greene, and the nose has notes of cherry cobbler, vanilla, tobacco, brown sugar, subtle spices, and a hint of almond oil. The taste is fruity and intense with an oily mouthfeel, as chili powder and black pepper spices are complemented nicely by cherry cobbler, tropical fruits, dark chocolate, and a hint of almonds. Adding water will open up fruity notes of peaches and apricots. The finish is long, dry, and well-balanced with subtle spices, a nice fruitiness, and an oaky character that makes this a very complex whisky. Excellent! (May, 2021)
