Method And Madness 28 Years Old Ruby Port Pipe. Image courtesy Irish Distillers Pernod Ricard.This single cask bottling started out in 1989 as Single Pot Still spirit from Midleton Distillery filled into American Oak casks, and was later filled into a Ruby Port Pipe in 1995 for the remainder of its maturation.

The nose is sweet and succulent with red grapes, plums, raisins, and molasses cookies. The taste is dark and rich with spices that build up slowly, then take over with clove, cardamom, and allspice balanced by a touch of orange marmalade. The finish is long, dry, and mouth-tingling with subtle spices. Excellent! (May, 2018)
