This heavily peated single malt from Springbank has been off the market for many years, but if you ever see one available – jump on it like a bear going after a salmon! The nose has a slightly medicinal character to go along with the peat smoke and hints of brine, smoked salmon, heather, and a touch of honey. The taste is smoky and briny with hints of smoked salmon, honey, heather, and vanilla. The finish is long, gentle, and smoky with hints of caramel candy, honey, and heather. Wow! (November, 2019)
