Koval Single Barrel Bourbon. Image courtesy Koval Distillery. This Bourbon from Chicago’s Koval Distillery has a very unique mashbill. While most Bourbons use some amount of either rye or wheat and malted barley along with corn, Koval uses a simple mashbill of 51% corn and 49% millet to make this single barrel Bourbon, then matures it for between two and four years.

The whiskey has a clean, light nose with notes of dry popcorn, honey, and vanilla. The taste is spicy with black pepper, clove, and nutmeg notes balanced by honey and a touch of vanilla. The finish has lingering spices along with the honey and vanilla notes. A nice change of pace! (March, 2017)
