Knappogue Castle Marsala Cask Finish. Image courtesy Castle Brands.This 12-year-old Irish single malt was finished in Marsala wine casks from Italy’s Marco De Bartoli vineyards. The nose has notes of a Starbucks mocha coffee with cocoa and chocolate balanced by hints of apricots, peaches, and toasted vanilla The taste is complex and starts off with fruity peach and apricot notes, then turns spicy with clove, coriander, and a hint of white pepper while vanilla and cocoa notes add balance in the background. The finish is long and tart with a subtle oakiness. (April, 2019)
