This single cask bottling for Abbey Whiskey spent most of its maturation in an ex-Bourbon cask before being filled into a Pedro Ximenez sherry cask for the final four months before bottling.
The nose has the usual mild peat smokiness associated with Kilchoman, along with notes of honey, grilled pineapple, a hint of lemon zest, and vanilla. The taste is creamy and thick with a slow buildup of smoke and spicy pepperiness, along with underlying notes of vanilla, honey, and brown sugar underneath. The finish is long-lasting with good spices, mild peatiness, and hints of grilled fruits underneath. (November, 2015)
