This Irish whiskey is unique in that the mashing, fermentation, and first distilling runs were done at the Cooley Distillery, then the raw spirit was trucked to Kilbeggan Distillery for the final distilling run and maturation. This expression represents the Kilbeggan distillery’s revival in 2007, and is only available at the distillery. Future editions of this whiskey will be completely produced at Kilbeggan.
The nose is light and malty with notes of straw, dried flowers, honey, caramel candy, and green apples. The taste starts off lightly spicy with a cinnamon spice that builds up slowly to a nice peak, while not overwhelming the vanilla, caramel, honey, and green apple notes underneath. The finish is light and lingering with tart apples and a mile pepperiness. (October, 2013)
