Kavalan 2007 Peaty Cask. Image courtesy Speciality Drinks/The Whisky Exchange.This single cask Kavalan was bottled exclusively for The Whisky Exchange in London, and was matured for nine years in a cask previously used for an Islay single malt. The nose has a subtle smokiness, along with notes of black tea and honey, fudge, toffee, and vanilla. The taste starts off dry and ashy, then the spices kick in with cinnamon and black pepper balanced by tart red apples, baked oranges, a hint of lemon zest, and oak. The finish has lingering spices, lemon zest, vanilla, and oak. Excellent! (July, 2017)
