Midleton Master Blender Billy Leighton crafted this whiskey for Jameson’s Whiskey Makers Series, and the name comes from the copper tube or “dog” used to pull whiskey samples from a cask. The nose is clean and crisp with touches of citrus, vanilla, honey, and dried flowers. The taste has an excellent balance as spicy notes of clove, nutmeg, and cinnamon blend with honey, vanilla, and a touch of oak for a rich mouthfeel. The finish is long, aromatic, and spicy with a good underlying sweetness. Excellent! (November, 2016)
