Jameson Distiller's Safe Irish Whiskey. Image courtesy Irish Distillers Pernod Ricard.This is Midleton Master Distiller Brian Nation’s contribution to the Jameson Whiskey Makers Series, and gets its name from the spirit safe found in distilleries to examine spirit coming off the stills. The nose is fruity and light, with notes of buttered popcorn, dried flowers, a hint of spiciness, coconut, vanilla, and honey. The taste starts off buttery-smooth, followed by a great pot still spiciness that builds up quickly with notes of clove, cinnamon, and nutmeg. Apples, honey, and dried flowers in the background add balance. The finish is nice and long with lingering spices and a slight tartness. Very nice! (November, 2016)
