Image courtesy Hillrock Estate Distillery.This Rye whiskey created by the late Dave Pickerell starts its maturation in casks with a #3 level char, but is later transferred to casks with a deeper #4 level char to complete the maturation process. The nose has an extra bit of vanilla along with good baking spices, honey, a subtle hint of dill, and baked apples. The taste is spicy and well-rounded with baking spices, tree fruits, honey, caramel, and a hint of figs. The finish is long with gently fading spices. Excellent! (March, 2019)
