Highland Park "The Dark." Image courtesy Edrington.This 17-year-old Highland Park single malt is part of a two-bottle series with “The Light.” The Dark is matured exclusively in ex-Sherry casks and bottled at 52.9% ABV, giving it a very fruity and aromatic influence on the nose with Christmas cake, orange marmalade, apricots, toffee, and a touch of figs. The taste is fruity and luscious with orange marmalade, apricots, figs, and toffee balanced by spicy hints of white pepper, ginger, and clove along with the barest whiff of peat smoke. The finish comes from the law firm of Long, Long, and Long…fading away very slowly with notes of orange pekoe tea, lingering spices, and a hint of licorice. Excellent! (January, 2018)
