Image courtesy Highland Park/Edrington.The counterpoint to Highland Park’s Ice Edition released earlier in 2016, this is the first Highland Park expression matured completely in Port wine casks. That influence gives Fire a slightly reddish color and a nose with notes of berry cobbler, black grapes, allspice, dried apricots, baked oranges, and a touch of brown sugar. The taste is tart and fruity with a good balance of spices – fresh berries and citrus blend well with allspice and cinnamon, while honey and brown sugar notes in the background provide a good counterweight. The finish has a lingering fruity tartness and subtle spices, and fades away very slowly. In short, a whisky that lives up to its name, but without the burn! (December, 2016)
