This Rye whiskey from South Carolina’s High Wire Distilling uses a combination of malted and unsalted Abruzzi Rye, and the nose has notes of fresh rye bread, hints of clove and dill, and a touch of leather. The taste starts off soft, then develops a great spiciness with clove, cinnamon, toasted oak, dill, honey, a touch of smokiness, and pipe tobacco. The finish is long and aromatic with good spices and a touch of honey in the background, then develops a slight dryness. A few drops of water helps open this one up nicely. (September, 2017)
