This is a unique whisky that came from a collaboration between Ryan Perry of Heaven’s Door and Midleton’s Billy Leighton. Ryan took 10-year-old Heaven’s Door-sourced Bourbon and finished it for 15 months in ex-Sherry casks that Billy and his team had used for Redbreast 12-year-old Single Pot Still Irish whiskey. The resulting combination brings out the qualities of both styles of whiskey. The nose has touches of apple pie, pipe tobacco, honey, black cherries, and cocoa beans. The taste is robust and well-rounded with a nice spiciness and notes of apple pie, dark chocolate, honey, black cherries  and a lingering nuttiness in the background. The finish is long and well-balanced. Excellent! (May, 2021)
