This 10-year-old Islay single cask bottling was produced for Calgary’s Kensington Wine Market, and is from an refill ex-Bourbon barrel. The nose is lightly peated with heather, honey, vanilla, citrus, and a hint of linseed oil. The taste is thick, chewy, and very spicy with cinnamon and black pepper notes, a good peaty smokiness, honey, and a touch of smoked salmon for a very complex palate. The finish is long and smoky with lasting spices that tingle the tongue, and adding a few drops of water makes the whole experience even more satisfying. (March, 2018)
