Photo ©2016, Mark Gillespie. This single barrel bottling of Dickel was nine years old, and while single barrels will vary from cask to cask, they generally have much of the same character. The nose is full of oak, vanilla, brown sugar, molasses, and caramel. The taste starts off with a touch of caramel cola, then turns dry and spicy with barbecue dry rub spices and hints of vanilla and oak underneath. The finish is long and astringent, and this one benefits from a few drops of water that helps open up the palate to reveal a touch of fruitiness while accentuating the spices. (February, 2016)
