What does one burn for fuel when there’s not much wood, no peat to speak of, and a whole lot of sheep around? The answer is obvious, and yes, Iceland’s Eimverk Distillery is one of only two I know of that produces a whisky smoked with dried sheep $#*! (the other one is Australia’s Belgrove Distillery).
Funny, though…the nose on this 3-year-old single malt doesn’t smell at all like you might think. There’s a nice touch of alfalfa and clover, along with hints of lime, mezcal, tequila, and dried flowers. The taste is tart, tangy, and light with white pepper, lime, lemon zest, dried flowers, and a hint of butterscotch. The finish is long and tart with a hint of spice. Unusual and worth seeking out!
