This whiskey takes Filibuster’s aged Bourbon and finishes it in French Oak casks, along with reducing the bottling strength to 45% ABV (90 proof). The nose has notes of toasted oak, cedar, sandalwood, pencil shavings, caramel, and honey. The taste has fruity notes of apples and berry cobbler balanced by allspice, a hint of white pepper, and touches of sandalwood, oak, and honey in the background. The finish is long and well-balanced between cooked fruits, subtle spices, and a woody character. (January, 2021)
