Photo ©2020, Mark Gillespie/CaskStrength Media.The folks at Phillips Brewing & Malting in Victoria, British Columbia have been supplying local distillers with malted barley for years and make some pretty good beer, too. They added a small distillery known as the “Fermentorium” several years ago, and this is their first whisky.

The nose has a malty, buttery aroma with hints of butterscotch, caramel, anise, and honey. The taste is fruity with a good maltiness and notes of orange peel, strawberries, anise, and butterscotch. The finish is long and fruity with subtle spices and a touch of maltiness. It’s young, but still well worth drinking! (February, 2020)
